Espuma [es'puma]: Spanish for foam or mousse
These are exquisite foams made of purées, coulis, creams, extracts or juices prepared in the iSi Gourmet Whip PLUS or iSi Thermo Whip PLUS. According to the celebrated Spanish Chef Ferrán Adriá, this new technique makes it possible to see and taste the “soul” of a food for the first time.

The Espuma method using the iSi Gourmet Whip PLUS or iSi Thermo Whip PLUS allows you to completely, or partially, do away with cream or egg as an emulsifier. As a result, the natural aromas and flavors of key ingredients are maintained for greater intensity and purity of flavor. Vitamins and nutrients are naturally maintained in the process.
